Our first truly collaborative wine. Utilising Great Southern Riesling, fermented to dryness combined with Victorian Fiano with some retained sugar to complete the “Pet Nat” process. A few buckets of Nero D’Avola to get a touch of blush and fruit sweetness completes the story.

A very “safe” style of Pet Nat that respects the fruit purity of Great Southern Riesling whilst embracing the texture and palate weight of the Fiano. Lots of floral aromatics with hints of musk and strawberries. The palate dances on the tongue with the perfect balance of acidity, flavour and effervescence.

Since we figured we had the father (Mike), the son (Callum) the only thing missing was the Holy Ghost. The Madonna quote on the back “papa don’t preach” stems from our little internal family banter in regard to Pet Nats – with dad of course being more of the purist in regard to Sparkling and the son being super passionate about pushing the boundaries.
